At nineteen, I stepped into a major commercial bakery where I spent nearly eight years mastering the craft from the ground up. Cross-trained in everything from artisan breads and delicate pastries to candy production and custom cakes, I gained a deep, well-rounded foundation in classical baking. That rigorous experience gave me the confidence to step out on my own, and nearly seven years ago, Top Flight Sweets was born.
